Happy Muesli

My, hasn’t time flown – it’s time for yet another post from my kitchen. I hope that everyone has been enjoying the weekly recipes from our wonderful contributors … there are many more up my sleeve yet to come!

Is it just me or has November crept up on us from nowhere? Christmas is now just around the corner and there is now a definite nip in the air [for the record I LOVE Christmas, so expect a blast of festive recipes in the coming weeks].

It is at this time of year, with all the colds and coughs around, it pays to eat a little healthy. By ‘healthy’ I mean self-nurturing healthy not bland self-punishing healthy.

With this in mind, I like to introduce you all to my healthy [and delicious] Muesli. It is so very simple to make and will give you the best start to the day. It’s perfect served with milk and topped with some seasonal fruit, but also perfect with a generous dollop of plain yoghurt or even used as a crumble topping. The following recipe is to be used as a guide – feel free to add whatever combination of fruit and nuts you have to hand.

Stored in an airtight container the Muesli will keep for a month. Enjoy!

Happy Healthy Muesli from Louise’s Kitchen

Ingredients

200g porridge oats [I like the organic jumbo variety]
100g wheatgerm
handful of sesame seeds
handful of linseeds
handful of pumpkin seeds
handful of sunflower seeds
handful of flaked almonds
handful of roughly chopped hazelnuts
100ml apple juice
2 tbsp of Good Oil or hemp oil
50g dried apricots
50g dates
50g sultanas

Method

1. Preheat the oven to 160C/ GM3

2. Put all your dry ingredients apart from the dried fruit into a roasting tin and add the oil and apple juice. Stir with a wooden spoon to combine and level the ingredients. Pop into the oven for a total of 20 – 25mins, taking it out for a quick stir once or twice. Then allow to cool.

3. Whilst the oats and seeds mixture is doing its thing in the oven, chop your dried apricots and dates into bit-sized chunks. Then coat these and the sultanas in a light dusting of flour to stop them sticking. Add the fruit to the muesli base and stir to combine. Tuck in!

Thanks for your lovely comment juliap … glad you like it. It’s a great recipe and you can pretty much add what fruit, nuts and seeds you have to hand. It’s easy to double up to for a bigger batch. Presented in pretty glass jars it would make a lovely christmas gift too! x
