* Tired tonight. I was on a shoot today and am exhausted, plus I have a cold.
* So glad I managed to cook garlic and lemon chicken with onion rice before I jumped in the shower, Dave and I are both poorly and fluey this week.
GARLIC AND LEMON CHICKEN
-Brown 4-6 chicken thighs in olive oil
-Add 20 cloves of garlic in skins (these will get soft and sweet when cooked) grated peel of 1 lemon, juice of 1 lemon, and sprig of thyme, cover in chicken stock and simmer for 20ish mins till cooked.
ONION RICE
-Fry 1 chopped white onion in butter, add rice and fry for 10 secs, add chicken stock and cook till absorbed.
Toast some fresh bread, sit atop onion rice and pour on chicken and lemony gravy. Squeeze garlic out of shells and spread on bread.
